What’s Cooking in My Kitchen: Pumpkin Seed Pesto with Harvest Grains and Hasselback Potatoes

We were supposed to go out to dinner tonight, but that got canceled at the last minute, so I had to come up with dinner on the fly. That translated into trying a Joy the Baker recipe, pulling out a bag of Trader Joe’s Harvest Grain blend and a bag of frozen broccoli. I also threw together a kind of pesto to top the potatoes like Joy did, but at the final moment I added it into the Harvest Grain blend, along with the broccoli. And that was amazing inspiration.

Pumpkin Seed pesto:
pumpkin seeds (roasted)
chopped parsley
chopped basil
salt
pepper
pinch of red pepper flakes
olive oil

Yep.
