The little turkey is turning one this month. We celebrated this past weekend by inviting a bunch of friends over for lunch.


We had chips with green chili salsa, red tomato salsa and roasted corn and black bean salsa.


That roasted corn salsa was a riff on a Bon Appetit recipe, only I added black beans and substituted queso fresco for the manchego. I also added diced purple onion and jalapeno.


We also had green chili enchiladas and smokey pork tacos (which I didn’t photograph before they got eaten). I was excited about the tacos, but the enchiladas were the ones that went like hot cakes!


To drink, we had Jarritos Mexican sodas in fun flavors like lime, mandarin, tropical punch, mango and grapefruit.


We finished it off with Dulce de Leche Cupcakes by Joy the Baker. I had to make a mini cake with some of the batter, since I just got two 6-inch pans.


Judging by how quiet it got when people started eating, I’m going to guess that a good time was had by all.
